The best priced grass fed, organic meat I can find is ground beef. This doesn’t bother me one little bit, until I start thinking of ways to cook it. Without the usual pasta or rice, it gets a bit challenging.
Today I had a fit of fancy and thought, “bell peppers are on sale, they aren’t organic, but once won’t hurt, right?”. So, I set 2 lbs of ground beef ($2.69/lb) out to defrost and ran to the market for 4 red bell peppers (.99 each).
Back home, I browned the beef and added a can of diced tomatoes with chiles. I sliced the peppers in half and cleaned out the seeds. Then I stuffed those pepper halves with plenty of meat. For added tasting pleasure, I sprinkled a bit of cheese on top (shush).
Now I’m thinking stuffed squash, stuffed mushrooms, stuffed sweet potatoes. . . the list goes on and on.
*Note- I don’t normally like bell peppers, nor do I like chiles or anything remotely spicy. What I’m finding is that the more grain free I eat, the more foods I am enjoying. These stuffed bell peppers sounded good to me, so I made them. . . surprise, I liked them!
