The kids are tired of eggs for breakfast (so is Mommy. . .). Today, I decided to try banana pancakes. We went with a recipe from Paleo Comfort Foods.
The result was delicious. They were good plain (we fried them in butter) and they were even better with a drizzle of real maple syrup.
This recipe will likely go into our rotation for weekend breakfasts and/or breakfast for dinner nights. They were a bit tricky to make as they didn’t firm up like traditional pancakes which made flipping difficult. We managed and they were worth it!
