My Girls and Their Cupcakes

For our afternoon baking project, the girls decided to make cupcakes.

Gluten Free Cupcakes by Kenzie Dear

First up, gluten free vanilla cupcakes by Kenzie Dear.  We used this recipe over at Cupcakes Take the Cake.  We used a mix of brown rice flour and Expandex (modified tapioca starch) for the flour.  The only other substitution we made was the use of vanilla almond milk.  For frosting, we beat MimicCreme and powdered sugar with a touch of natural food color.

During the mixing and baking process, I had to explain to 8 yo Kenzie how baking fits into schooling.  I’m not sure she’s convinced.

Kaylee Girl made standard vanilla cupcakes using a (very basic) recipe from a Love Food Cupcakes cookbook I have.  For frosting, we beat whipping cream with powder sugar and a touch of natural food color. Kaylee made these entirely by herself, with only one reminder from Mom to follow the instructions instead of doing her own thing.

It was another fun baking afternoon in the Polka Dot House!
