We get so wrapped up in replacing wheat foods that we often overlook all the naturally gluten free foods which nature supplies us! If you are new to gluten free… first look at all the foods you already eat… WHOLE FOODS (meat, dairy, veggies, fruits) are usually naturally gluten free.
Today we enjoyed-
For breakfast… sliced bananas with almond butter and scrambled eggs (with a splattering of shredded cheese for those who are not dairy free!)
For lunch… corn chips, refried beans, salsa and shredded cheese
For dinner… boneless skinless chicken thighs with grilled mushrooms and rice (this was REALLY good)
We keep a big bowl of ready to eat veggies (mushrooms, carrots and broccoli currently) and a bowl of salad in the fridge which we set out at lunch and dinner time. We also keep a ready supply of fresh fruits (currently strawberries, apples and bananas) which the kids can grab for snacks. Our kids like crunchy snacks so we keep a supply of rice cakes, lays potato chips and air popped popcorn around as well!
Today I’m grateful for the wonderful foods God has filled our earth with and the ability to make gluten free meals for my entire family so K3 doesn’t feel “different”.
