K-Man turned 9 this weekend. On Friday night we had a sleepover party with five of his friends… it went remarkably well… I think we learned from our experience last month with K3’s sleepover which had 12 little girls sleeping in our house.
On Sunday, the official birthday, we asked K-Man what he wanted to do… he said “Dog Park” and “Bake Cookies”. So, in the late afternoon we busted out his new cookbook “Wookiee Cookies And Other Galactic Recipes” which his sisters had gifted him.
And here is the result…
Wookiee Cookies adapted from Wookiee Cookies and other Galactic Recipes:
2 3/4 cups gluten free flour blend (if using wheat flour skip the zanthan gum)
3 tsp zanthan gum
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 cup Earth Balance butter- room temperature
1 cup packed brown sugar
1/2 cup sugar
2 lg eggs (or appropriate egg replacer/flax gel)
1 1/2 tsp vanilla
1 bag enjoy life chocolate chips (original recipe calls for 1 cup milk and 1 cup dark choc. chips)
Preheat to 375 degrees F.
Mix dry ingredients, set aside.
In bowl of stand mixer, combine butter and sugars. Blend until creamy. Add vanilla and eggs. Blend well.
Slowly add dry ingredients and mix until well combined.
Add chips, mix gently.
Scoop onto insulated baking sheets (rounded teaspoon full).
Bake for 10-12 minutes (watch closely… each sheet took a different time).
Allow to cool on sheet for 2-3 minutes and then lift onto cooling rack.
Makes about 3 dozen.
