What’s for Dinner? The Cupboards are Bare.

Tonight I took stock of the food situation. We were basically snowed in for two weeks. The weather has been clear for nearly a week now but we still haven’t gone grocery shopping. It’s more of a not wanting to spend more money, the holidays are over, just chill thing…

So, we are down to:

  • a couple meals of frozen chicken
  • one bag of pasta
  • lots of rice
  • 2 cans cream of chicken soup
  • red pasta sauce
  • white pasta sauce
  • dried beans (red, black and pinto)
  • tortillas, bread, cereal
  • milks, cheese, salsa
  • baby carrots
  • mandarin oranges
  • canned mushrooms
  • corn
  • salsa

What meals would YOU make from this list? We opted for chicken quesadillas w/ beans and salsa for tonight. Keep your fingers crossed for me that I can convince hubs to hit Costco tomorrow and restock! Sheesh!

I would LOVE some new dinner ideas. We do the same foods over and over again. We are gluten free/dairy free but I can usually manage to sub for most regular recipes! Please share. I’m begging. 🙂

    Ooh… I’d throw the chicken and carrots into a crock pot with a can of cream of chicken. Then serve it over the rice.

    Or… chicken & pasta alfredo

    or… chicken and/or bean & cheese burritos, mix the salsa with the rice for some spanish rice and refried beans

    It’s doesn’t cover what you have in your cupboards but we had butternut squash “fries”, with clam cakes (Ener-G bread crumbs so gluten free) and steamed cabbage today. A large head of cabbage is dirt cheap and the squash would be too. We go clam digging so we had clams in the freezer but I don’t think canned is too bad. All gluten-free, dairy-free and yet extremely tasty!

    One more thing… I make my ‘white girl enchiladas’… I mix a can of cream of chicken up with shredded cheese and shredded chicken, then stuff the tortillas with them. Cover with sauce and cheese and throw in the oven. You can add diced green chiles or olives or cream cheese if you have them and they are YUMMY! (I think the Campbells site has loads of recipes with their soups…check it out!)

  5. Mmmmm… ‘white girl enchiladas’ sound tasty! I make homemade cream of chicken because of wheat/gluten in commercially prepared ones and this would be a tasty change!!!!!

    Butternut squash fries… also an interesting idea! I have shrimp cakes on the menu this week… might have to get some squash to go with! (We did grocery shop finally and have full cupboards again!)
