Favorite Kids Foods: Gluten Free Mini Pizza’s

I’m constantly on the look out for new foods to shake things up around here. The kiddos get bored of the same foods over and over (so do I!). Lately, K3 has been complaining a lot about her dietary restrictions and Little Critter only wants crunchy foods. Yikes.

The other day, I picked up the 6 year old girl that I watch one day a week. She had brought a pizza lunchable for her lunch. Of course, Little Critter thought it looked like fun and wanted “one of those.” This Mama doesn’t buy lunchables… sorry kids.

We improvised and Little Critter was a happy bean. I took out a few Glutino Gluten Free Crackers (multi-grain), topped with a dab of all natural red pasta sauce and topped with slices of Tofutti American Style Cheese. The kids eat these cold, however they can easily be put under the broiler for a minute until hot and bubbly. (We’ve also been known to make mini pizzas on gluten free bread, corn tortillas and english muffins.)

Another Gluten Free favorite in our house is to slice bananas (into circles) and top with fresh ground peanut butter (almond butter, soy butter, sunflower butter) and a few dried cranberries, raisans or Enjoy Life Chocolate Chips. This makes a great high protein snack and the kids think its a treat.

Speaking of treats, I found a recipe for homemade bon-bons. I am going to modify the recipe to be gluten free/dairy free and see how the kids like it! Definitely not a healthy snack, but a healthier version of a tasty treat!

If I was a celebrity, or wealthy, I would so hire you as my personal chef. The things you come up with sound so yummy. You are one creative mama!
Ugh, that watery rubbery meat in lunchables- gag me with a spoon…
