Since today is another Meatless Monday, we will not actually be having any chicken. For those who aren’t familiar, “Winner, Winner, Chicken Dinner!” is an old BlackJack saying.

Tonight we will be enjoying Four Bean Chili & GF Cornbread. I’ll post that recipe next week. Here is last Monday’s tasty!


Shrimp Alfredo (This is a recipe adapted from Miss. Maggie, also take a look at Meatless Mondays Seafood Recipes)

If you don’t need dairy free in addition to gluten free, follow Miss. Maggie’s recipe replacing flour with GF flour blend (or just white rice flour). Serve over GF pasta, rice or mashed potatoes. We enjoyed this with frozen whole shrimp as we still had some in the freezer. Miss. Maggie recommends topping with canned shrimp, tuna or salmon or flavored TVP. This is also great without any seafood/meat substitute. We enjoy adding some zucchini or whatever fresh veggies we have on hand.

For a dairy free version, make the following replacements.

Replace the evaporated milk with Unsweetened MimicCreme, Pacific Natural Foods Soy Blenders, or Mocha Mix (which isn’t healthy or natural, but works in a pinch!).

Replace butter with non-dairy alternative such as Earth Balance.

Replace parmesan cheese with vegan cheese.

(The Farfalle in the photograph is NOT GF. We always make two kinds of pasta, Tinkyada Pasta Joy Shells or Little Dreams for the GF peeps and regular Farfalle for the non-GF. I would LOVE to find a GF Farfalle!)

The sauce was a little on the thick side, so we will continue to experiment with liquid adjustments. I like to keep some plain rice or coconut milk handy to thin it down if need be!

    Oh my yumm! We went out for italian last night and Dennis had Alfredo and it was not GF or DF haha

    OHMYGOSH that pasta looks good – it makes me hungry even though I ate dinner 10 minutes ago.

    I’m going to have to go scrounge through the kitchen now.
