Our first GF day is off to a good… if rocky start. For breakfast, we kept it simple with EnviroKidz Peanut Butter Panda Puffs with Soy Milk.
Lunch was a bit more of a challenge. We settled on a simple cheesy, tater tot bake.
1 bag Ore-Ida Tater Tots
2 chicken breasts, fully cooked and diced
1 C. shredded cheese
Your favorite seasoning blend (we like Johnny’s)
Layer tots, chicken and cheese in a baking dish. Add seasoning blend, kosher salt and pepper. Bake at 450 degrees F for 25 mins.
This was a hit. Simple, easy and everyone loved it.
