GF One Meal at a Time

Planning dinner today, we encountered a bit of a struggle.  Daddy wanted to get pizza.  Kenzie can’t have pizza and I felt it wouldn’t be fair… at least until we hit the markets and collect a full pantry… then I could have made Kenzie- friendly pizza.   Finally, we settled on burritos.  We made a quick dash to the market to collect safe refried beans and all corn tostada shells.  Everyone but Kenzie had soft burritos, rolled up in flour tortillas.  At first, Kenzie asked “why do I have this?”.  I advised her because this was a new Kenzie food, that it was kind of like chips.  She decided it was delicious and had a second helping.  The other kids wanted to drink the vanilla soymilk, but if I allow all 7 of us to eat the way Kenzie does, we will have an outrageous grocery bill!  It hasn’t been too hard (yet!) to look at the foods we eat and modify them to be GF and Milk free.   We are using cheese and yogurt, but no other dairy as her bloodtests showed she wasn’t reactive to cheese or yogurt (or casein for that matter!) and was most reactive to milk and whey.  Strange, but true.  I did discover that most taco seasonings packs contain milk or whey, so we modified.  I used natural ground turkey, mild salsa, refried beans, cheddar cheese and corn tostadas.   We finished the meal with applesauce sprinkled with cinnamon.
