Join the Polka Dot Household as we venture into Meatless Mondays. This might get a little scary folks.
Seriously though, if we as a family omit meat consumption ONE day a week… we will reduce our intake by 15%. It isn’t even hard to do! I’m already plotting how to turn this into a Meatless Monday, Wednesday & Friday thing.
If you want to go all crazy… you can drum up some pretty spectacular meals sans meat. We keep things pretty simple around here, so you can expect to see things like:
*Chili made with lots of BEANS & Cornbread
*Breakfast for Dinner (Pancakes anyone?)
*Veggie Pizza (There will be NO SPINACH on it!)
*Rice Pasta, Red Sauce and Summer Squash
*Grilled Cheese and Spring Salads
*Veggie Stir Fry with Rice Noodles
Getting Oregon Dad to buy in (especially at work) will be a big challenge. I will be packing his lunches, since I usually send left overs, this may mean that Sundays are Meatless as well! Or he can enjoy some fresh ground peanut butter and homemade blackberry jam sandwiches.

We so need to do this. SuperDad and I were just talking yesterday about how eating meat completely destroys our otherwise pretty-good carbon footprint rating.
We’re thinking of switching to only local meat.

Cutting back on meat just one day a week can not only reduce your carbon footprint (and your grocery bill) but also lower your risk of heart disease, stroke, diabetes, and cancer. Not a bad deal, huh?

The chili and cornbread is a great idea! Autumn is around the corner and that will be a great recipe.
Pancakes for dinner- we’ve been doing this since I was a kid! Mom had a lot of kids to feed and meat was(is) expensive.
My kids LOVE waffles topped with your homemade blackberry jam! I do too!
